Rose Aperol Spritz

A riff on a classic aperol spritz, this cocktail features aperol liqueur, simple syrup, grapefruit, and topped with sparkling rose.

This weeks Bon Appeteach “Book Club” libation was inspired by the 1921 series of novels called, The Forsyte Saga. 

The series focuses on Soames Forsyte aka “The Man of Property”.

He liked to own things, including his wife. Which obviously ended in a loveless marriage.

This obviously doesn’t at all sound like a very inspiring Valentine’s Day story, so I created this cocktail instead to hopefully ease the tension.

Because, we’re not here to actually read the book, but to drink the drinks.

How to shake up this cocktail:

This cocktail is a riff of the classic Aperol Spritz. The first time I had one in Italy I’ll admit, I didn’t like it. Aperol is pretty bitter and I hadn’t yet discovered my love for a good craft cocktail.

This version is less bitter with the addition of a sparkling rose, the grapefruit, and the simple syrup to balance out the aperol. 

A classic spritzer is built into the glass, but because I added some homemade keto simple syrup and the grapefruit, I opted to shake them with the aperol before pouring in the rose to ensure a good mix was achieved.

I garnished the cocktail with a grapefruit rosette. Learn how to make a fruit flower garnish too with this guide!

Cut a 1/4″ wheel from the grapefruit and cut one slit all the way into the middle. Use one edge to roll up and around and secure it with a toothpick or decorative cocktail skewer and place in the glass.

Instructions

  • In a cocktail shaker, add ice, grapefruit juice, simple syrup, and the aperol.
  • Shake until chilled.
  • Pour the contents into a wine glass.
  • Top off the glass with the sparkling rose and a grapefruit rosette.

Notes

Use honey simple or standard simple syrup too as an alternative.
