Supplies Needed:

  • Sheet Pan
  • Skillet
  • Sauce Pan

Ingredients:

  • Tortillas: The largest flour tortillas work best here, since we are layering them and making one huge sheet pan burrito!
  • Butter: To make sure the tortillas don’t get stuck to the pan and they get super crispy on the tops.
  • Cheddar Cheese: Shredded cheddar cheese works well here, but any of your favorite shredded cheese will do!
  • Eggs: Scrambled eggs make this the perfect, high-protein breakfast option. You can opt for just egg whites if you prefer!
  • Ground Sausage: I like to use ground pork breakfast sausage here. Use your favorite ground sausage!
  • Red Pepper: For added veggie and a little crunch!
  • Green Onions: Green onions are great for added flavor and texture, too.
  • For the White Gravy: To whip up a homemade gravy, you will just need butter, flour, whole milk, salt and pepper! The gravy really makes these special, and will curb all of your breakfast burrito cravings!

Cooking Instructions:

  1. Preheat & Make Gravy: Preheat the oven to 425 F. Make the white gravy sauce for the base of the breakfast burrito to start. In a pot over low heat, melt 1/4 cup butter then add the flour to create a roux. Cook for 1-2 minutes before slowly adding the whole milk into the pot. Whisk until combined and slightly increase the temperature until thickened. Season with salt and pepper and set aside.
  2. Cook the Sausage: In another pan, cook the ground pork sausage and drain it onto a paper towel lined plate and set it aside.
  3. Scramble the Eggs: Finally, beat all the eggs together in a large mixing bowl and cook until scrambled.
  4. Assemble: Assemble the sheet pan burritos by brushing melted butter onto you sheet pan. Layer 6 tortillas around the outside of the pan so some of it hangs over the sides. Add two tortillas to the middle. Gently press the tortillas into the pan so it fits into the corners.
  5. Add Layers: Add the white gravy in an even layer on top of the tortillas then cover with the ground sausage. Next, add the scrambled eggs, diced peppers, green onions, and then cover entirely with shredded cheddar cheese.
  6. Fold: Place the last two tortillas with the remaining melted butter. Fold the tortillas hanging over the the side towards the center to completely cover the inside filling.
  7. Brush & Bake: Brush the top of the tortillas with the remaining melted butter. Place a second sheet pan down over the top. Bake for 20 minutes and then remove the second sheet pan to brown the top layer for another 5 minutes.
  8. Serve: Remove from oven and let it rest before slicing into servable pieces. Enjoy!

This sheet pan burrito can be made in so many different ways, and I highly recommend making them just how you like them. If you haven’t tried them already, you absolutely have to try my sheet pan crunchwrap supreme version! But here are some other ideas that would also be amazing:

  • Substitute the sausage with mushrooms or extra veggies for a vegetarian version!
  • Omit the eggs and use ground beef or chicken for lunch vibes!
  • Switch up the add ins! Another delicious option would be diced and roasted potatoes or sweet potatoes!
  • For gluten-free sheet pan breakfast burritos, use your favorite gluten-free tortillas! They might not be as big, so layer them accordingly to make sure the whole thing is covered!

Tips For Meal Prepping:
