- Flour Tortilla: The crust for this easy tortilla egg bake is a large burrito size tortilla which lines the dish and crisps up into a golden crust.Lavash bread works too if you prefer a thinner option.
- Eggs: The base of the bake, providing structure and protein!
- Cottage Cheese: Full-fat works best for a creamy, fluffy texture and added protein.
- Shredded Cheddar Cheese: Adds a melty, sharp flavor. Feel free to swap in Monterey Jack or mozzarella!
- Salt & Black Pepper: Season to taste.
- Filling Options: You can choose your favorites, but I added broccoli, onion, bell peppers, spinach, cooked sausage and crispy cooked bacon for a packed tortilla egg bake!
How to Make a Tortilla Egg Bake
- Preheat & Prep: Preheat your oven to 375°F. Lightly grease a 9-inch cake pan or pie plate (or similar baking dish). Place the large tortilla into the dish so it slightly curves up the sides.
- Prep Your Veggies: If you are adding any vegetables and want to cook them prior to adding them in, do this now so they can cool slightly before adding to the filling. You can also just add them in as is if desired.
- Make the Egg Mixture: In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until well combined.
- Add Fillings: Add any vegetables or proteins into the tortilla, then carefully pour over the egg mixture and top with any cheese.
- Bake: Bake uncovered for 25-30 minutes, or until the center is set and the top is golden brown.
- Cool & Serve: Let it cool for 5–10 minutes before slicing. Serve warm with salsa, avocado, or hot sauce if desired.
Flavor Variations and Substitutions
- Use egg whites. If you want a low fat option, you can use just egg whites and fill it up with plenty of veggies and low fat cheese! It won’t have as much rich flavor, but it will still be delicious.
- Change up the cheese. You can swap cheddar for pepper jack, feta, mozzarella, or a sharp gouda depending on your flavor preference. A mix of cheeses also works great for extra depth!
- Use different greens. Instead of spinach, try kale (lightly sautéed first), arugula, or chopped zucchini for a fresh twist.
- Go vegetarian or meat-lover. Skip the meat and bulk up on veggies for a vegetarian option, or double down with both bacon and sausage for a protein-packed and savory brunch.
- Add some spice. Add a pinch of red pepper flakes, diced jalapeños, or a splash of hot sauce to the egg mixture for extra heat.
Tips for the Best Tortilla Egg Bake
- Tortilla egg bake is done cooking when the center no longer wobbles and looks firm, and the cheese on top should be lightly browned and bubbly. If you aren’t sure, insert a toothpick or knife into the center—if it comes out clean or with just a bit of melted cheese, it’s done.
- Pre-cook dense vegetables and meats. I recommend sautéing the more dense vegetables like broccoli and bell peppers before adding them. You also will need to brown any sausage or bacon beforehand to make sure they are thoroughly cooked through!
- Use full-fat cottage cheese! This keeps the egg mixture creamy and helps with structure. Low-fat versions can water down the texture and don’t hold up as well in the oven.
- Let it rest before slicing. Give the egg bake 5–10 minutes to cool slightly before cutting. This helps the structure set and makes cleaner slices.
- Don’t overfill. Stick to about 1–1½ cups total of fillings to avoid overflow or uneven cooking. Too many additions can weigh it down.

- Top it off: Serve warm with sliced avocado, a dollop of sour cream, or a spoonful of heirloom tomato salsa. A sprinkle of fresh herbs like chives or cilantro adds a nice finishing touch.
