  • Chicken Breast: You will want boneless, skinless chicken breast for this nugget recipe. Cut them into cubes according to your liking, but make sure they are all about the same size!
  • Pickle Juice Brine: This is the secret to juicy, flavorful nuggets just like the ones you can get at Chick-fil-A! Simply use the brine from your favorite pickles.
  • Salt Pepper Garlic Rub: You can buy your salt pepper garlic rub from the store or simply make your own by mixing equal parts salt, cracked black pepper, and granulated garlic!
  • Olive Oil: A little olive oil will keep the chicken from sticking to the grill grates.
  • Sauces: Arguably the most important part of this meal. Choose all of your favorite dipping sauces for these grilled chicken nuggets!

How To Make Grilled Chicken Nuggets:

Preparation:

  1. Prep Chicken: Remove the chicken breast from the packaging and pat it dry with paper towels. Use a sharp knife to cut even 1-inch cubes and place the chicken into a large container.
  2. Brine: Pour the pickle juice brine over the chicken so it covers it completely. Place a cover on the container and place it into the fridge for at least 2 hours or overnight.
  3. Pat Dry & Season: Remove the chicken from the brine and discard the brine. Pat the chicken very dry again with paper towels to remove the moisture. In a bowl, add the olive oil and the salt pepper garlic (SPG) rub, and coat until the chicken is evenly seasoned.

Grilling Instructions:

  1. Skewer Chicken: Thread chicken onto skewers for quick and easy grilling. Don’t over-pack them, give each piece of chicken enough space to cook properly.
  2. Preheat & Grill: Preheat the grill to medium direct heat (around 425 F). Place the skewers directly onto the grill grates, close the lid, and let the chicken cook for 5-6 minutes on the first side. It is ready to flip when it easily releases from the grill grates.
  3. Flip: Flip the chicken and continue to cook for an additional 5-6 minutes or until the chicken is nicely seared, has color, and is at an internal temperature of 165 F.
  4. Remove & Serve: Remove the chicken skewers from the grill and let them rest for 5-10 minutes. Use tongs to pull the grilled chicken nuggets off of each skewer. Place into a serving bowl and serve with your favorite sauce! We love hot sauce, Carolina Gold sauce, and BBQ sauce!
