Easy Keto BBQ Chicken Casserole with avocados and cilantro

Take your BBQ chicken off the grill and into the oven with this easy to make keto low carb casserole using leftover chicken, crispy bacon, low carb BBQ sauce, and lots and lots of cheese! The perfect under 30 min keto meal for the whole family.

I’m a tried an true BBQ fan as I very well should be, considering I live in Kansas City after all. As an avid year round griller (even in those chilly winter months) I often crave barbecue chicken recipes but often aim to keep them as keto and low carb as I can.

One of my favorite ways to do this is to use my sugar free keto and Low Carb Smoky BBQ Sauce recipe! One serving is only 1 net carb and is made with household staple ingredients most people have in their pantry.

As much as I love grilling even through the colder months, I know that’s not for everyone. I also love finding ways to throw together a healthier keto chicken dinner with leftover shredded chicken or by using a rotisserie chicken I can pick up on my way home for those weeks I need something simple and fast to feed my family.

This recipe takes one mixing bowl and just one casserole dish, and features some of the same flavors that inspired my Low Carb California Flatbread Pizza recipe (these flavors pair so well together so I created this keto recipe in casserole form instead).

Whether you’re following a strict keto or low carb meal plan or not, this chicken casserole with bacon, BBQ, and lots of cheese is the perfect comfort food dinner for the whole family!

Using Shredded Chicken-

You have a few options for this recipe in how you go about obtaining your shredded chicken. If you have chicken in your fridge or freezer, you could easily toss some chicken breasts (or use a darker meat like chicken thighs) into your slow cooker / crock pot in the morning and come home and shred it to make this for dinner!

Alternatively, you can prepare your raw chicken in the instant pot and cook on high too. I often have shredded chicken in my fridge that I use for meal prep recipes like this Low Carb Greek Chicken Salad or these Bruschetta Chicken Lettuce Cups, so this dinner is that much easier for me. It never hurts to also stop and grab a rotisserie chicken from your local grocer too.

I’m all about that easy dinner (and minimal clean up) life, aren’t you?

Teacher Tip – To easily and quickly shred your chicken, toss the cooked and warmed chicken into a stand mixer and with the paddle attachment, mix on low speed. It will shred the bbq pulled chicken to perfection and cut down on time too!

Casserole Assembly-

This keto shredded chicken BBQ dish comes together really easily, as casserole generally do. Which is why they are the best weeknight dinners!

Low Carb Smoky BBQ Sauce

Start by softening some cream cheese (you could also sub for sour cream in a pinch) and adding in the low carb BBQ sauce. I am partial to the smoky sauce I make, but there are also a lot of low carb BBQ sauces available in stores and online. I love the G. Hughes brand when I’m in a pinch!

Once the bbq sauce and cream cheese is mixed, add it to your cooked, shredded chicken. Toss in some chopped bacon and your sauted red pepper and onions. Reserve some of the pepper and onion mixture for the top of your casserole thought too!

Simply fill the base of a casserole dish with this mixture and top it with your favorite cheese. I love pepper Jack because of the heat it brings but a mozzarella or cheddar cheese would be a great low carb keto option too.

Teacher Tip – Shred your own cheese! I know, I know… this takes a little more time. However, store bought shredded cheeses are coated to help prevent the cheese from clumping and sticking in the bag. Shredding your own makes for a meltier dish overall and none of the extra pesky additives.

Once the cheese is added, sprinkle on the remaining cooked pepper and onions and pop it in the oven until its heated through an nice and bubbly. I like to garnish the top with diced avocado and some minced cilantro. I find this is what really pulls in those California pizza flavors into this casserole.

Store the leftovers for up to a week in the fridge or divide into smaller containers and freeze for a keto friendly lunch for a later day.

Ingredients

  • 4 cups Shredded Chicken
  • 6 Bacon Slices Chopped
  • 1/2 Red Pepper diced small
  • 1/4 cup Red Onion diced small
  • 1 cup Low Carb BBQ Sauce
  • 2 oz. Softened Cream Cheese
  • 1 1/2 cups Shredded Cheese I used Pepper Jack
  • Optional Garnish- Diced Avocado & Cilantro

Instructions

  • Preheat the oven to 350 F.
  • In a bowl, combine the low carb BBQ sauce and the softened cream cheese and combine. Mix in the chicken, bacon, and half of the pepper and onion mixture (you can pre-saute the peppers and onions if desired or toss them in raw).
  • Mix well until the chicken is fully coated and combined. Pour into a 9×9 inch pan or casserole dish. Top with the cheese and remaining pepper and onion mixture.
  • Bake until heated through and bubbly about 20 minutes or so (you may need more time if the chicken was cold). Serve with diced avocado and cilantro over the top.

Notes

Store leftovers for up to a week in the fridge.
