Cooking Instructions:

This recipe is really simple to put together. I like to use ground chicken when I don’t have extra shredded chicken left on hand, but you could use this as well if preferred.

Preparation:

  1. Preheat your oven or a smoker to 350 degrees F.
  2. Begin by combining the raw, ground chicken and the ranch seasoning packet in a skillet. Cook over medium-high heat until the chicken is no longer pink and fully cooked through.
  3. Remove the pan from the heat and let the ground chicken cool slightly. If there is excess moisture from the cooked chicken in the pan, drain this (or use paper towels to absorb it).
  4. Next, add in the mayo (I know may seem like an odd thing to add but TRSUT me it’s what makes this really rich and ooey-gooey in the best way). Stir in the shredded cheese and mix everything together.
  5. Slice your dinner rolls in half and remove the top. Spray aluminum foil with nonstick spray and place two pieces of foil down, slightly overlapping them.
  6. Place the bottom of the rolls onto the middle of the foil. Top with the ground chicken.
  7. Layer on the crispy bacon slices, thinly sliced red onion, and slices of cheese. Place the top of the rolls bacon on and wrap tightly in the foil.

Baking/ Smoking:

  1. Place in the oven (no pan needed) or onto the grill grates and cook until the cheese is melted (about 20 minutes).
  2. Remove from the oven or smoker. Let rest for 10 minutes. Brush melted butter over the top and garnish with some parsley and sesame seeds if desired.
  3. Carefully slice using a serrated bread knife and serve.

Helpful Tips:

  • Make sure to remove any liquid in the pan after cooking the ground chicken. If it’s too wet it will make the slider buns soggy and they won’t hold together very well.
  • Do not add extra ground chicken to the standard recipe. Overloading the buns makes it harder for them to hold together.
  • Swap regular mayo for an avocado mayo or use your own homemade ranch seasoning if desired.
  • If you want to make these ahead of time, just prep the filling and assemble them before baking. Warm the cold filling up a bit beforehand to reduce the baking time (or add another 15-20 minutes to the total time).
  • Reheat extra sliders in the microwave for 30-45 seconds each or warm them on a lower heat in the oven. Keep the bun covered if using the oven so they don’t get too crispy.

Ingredients

  • 1 pack Hawaiian Dinner Rolls 12 ct.
  • 1 lb. Ground Chicken
  • 1 packet Ranch Seasoning
  • 1/2 cup Mayo
  • 1 cup Shredded Pepper Jack Cheese
  • 4 slices Pepper Jack Cheese
  • 4 slices Cooked Bacon
  • 1/4 cup Red Onion thinly sliced
  • 1 tbsp. Melted Butter optional

Instructions

  • Preheat the oven or smoker to 350 degrees F.
  • In a skillet, combine the ground chicken and ranch seasoning packet. Cook the chicken until no longer raw. Remove any liquid remaining in the pan by using paper towels to absorb it or strain the meat if needed (do not skip this step).
  • Remove the chicken from the heat and fold in the mayo and shredded cheese. Mix until fully combined.
  • Place two pieces of foil down so they are slightly overlapping. Coat in non-stick spray.
  • Slice the Hawaiian rolls in half and place the bottom onto the center of the foil.
  • Layer the ground chicken onto the bread. Cover with the crispy bacon, sliced red onion, and additional slices of pepper jack cheese. Cover with the top of the rolls and wrap the foil tightly around everything.
  • Place into the oven on the rack or onto the grill grates of a smoker (no pan needed). Bake or smoke for 30 minutes, or until the cheese is melted through,
  • Remove and let cool 10 minutes before slicing (this helps the ground chicken set a bit). Slice with a serrated knife and serve with a side of ranch dressing or BBQ sauce if desired.

Notes

Want to prep these ahead of time? Pre-make the ground chicken filling and prep the layers but do not assemble until ready to bake/ smoke. Warm the filling up before adding to the bread to reduce the cooking time (if it’s cold and goes into the oven this way you will need to add about 20 additional minutes to the cooking time).
