If you love ribs with big smoky flavor and a tangy barbecue sauce, these Carolina Gold Party Ribs need to be on your next cookout menu. Instead of smoking a whole rack and slicing it at the end, I cut the baby back ribs into individual pieces first, then coat them in a homemade mustard BBQ rub so every rib develops its own bark.

After they smoke, I finish the ribs in a pan with Carolina Gold BBQ sauce, honey, and butter. The result is tender, sticky ribs with caramelized edges, plenty of bark, and that signature tangy mustard flavor in every bite.

Ingredients

For the ribs

  • Baby back ribs: Stick with baby backs. They have more meat on top of the bone, so they hold up when smoked one at a time. Spare ribs and St. Louis ribs have more meat between the bones and can dry out.
  • Yellow mustard: Used as a thin binder so the rub sticks. Olive oil or Worcestershire sauce also work.
  • BBQ mustard rub: The homemade rub below. Make it ahead and store the extra.

Spritzing

  • Apple cider vinegar and water: Mixed in a spray bottle to keep the ribs moist and help the bark form.

Carolina Gold glaze

  • Carolina Gold BBQ sauce: My homemade mustard-based sauce with honey, brown sugar, and apple cider vinegar. Any store-bought Carolina Gold or mustard BBQ sauce works if you’re short on time.
  • Honey: Adds sweetness and helps the glaze turn sticky.
  • Butter: Cubed. It melts into the sauce and keeps the ribs juicy while they braise.

BBQ Mustard Rub

This rub is built to match Carolina Gold sauce. Dry mustard powder gives it tang and a little bite. Brown sugar helps the bark caramelize. Paprika adds color and a mild smoky flavor.

What’s in it: light brown sugar, smoked paprika, dry mustard powder, kosher salt, garlic powder, onion powder, black pepper, and cayenne.

How to make it: Add everything to a small bowl and mix well. Break up any brown sugar clumps with a fork so the rub coats evenly. Store the extra in an airtight jar in a cool, dry spot.

Substitutions: Use sweet paprika for less smoke. Cut the cayenne or leave it out for a kid-friendly rub. Dark brown sugar also works and adds a deeper molasses flavor.

How to Make Carolina Gold Party Ribs

Prep the ribs

  1. Preheat your smoker to 250°F and set it up for indirect heat.
  2. Remove the membrane from the back of each rack. Use a sharp knife to cut between every bone so each rib is separate.
  3. Coat each rib in a thin layer of yellow mustard.
  4. Season every side of each rib with the BBQ mustard rub.
  5. Set the ribs on a wire rack, bone side up, if they will stay that way. Mix the apple cider vinegar and water in a spray bottle.

Smoke the ribs

  1. Place the wire rack in the smoker. Smoke for about 2 hours, spritzing the ribs with the vinegar mix now and then.
  2. The ribs are ready for the glaze when the bark is set, and the bones start to show on the sides. This usually takes 2 to 2.5 hours. Make your Carolina Gold Sauce recipe during this time.

Glaze and finish

  1. Move the ribs to a large foil pan. Pour the Carolina Gold BBQ sauce and honey over the top and add the cubed butter.
  2. Cover the pan tightly with foil and return it to the smoker for about 30 minutes, until the ribs are probe tender and read over 195°F.
  3. Toss the ribs in the pan sauce and move them to a platter. Spoon extra sauce over the top and serve.

Tips and Variations

  • Check tenderness, not just time. Smokers run hot and cold. A probe should slide into the meat with almost no push.
  • Keep the rub thin and even. Thick patches of brown sugar can turn bitter over a long smoke.
  • Make the sauce and rub ahead. Both keep well, so you can do them a few days early and save time on cook day.
  • Add heat. Use hot honey in the glaze or add extra Tabasco to the sauce.
  • Storage: Cool leftovers and keep them in an airtight container in the fridge for up to 4 days.
  • Reheat: Cover with foil and add a splash of sauce or water, then warm in a 300°F oven until hot.
