Fair warning, these sugar and cinnamon-coated peanut butter crackers (aka churro crackers) are addictive and a fun and festive customizable treat you can make all year round. The combination of peanut butter and cinnamon sugar is always a great sweet treat combination. Supplies Needed:

  • Small Pot
  • Whisk

Ingredients:

  • Peanut Butter Cookies (I used Nutter Butters for this but you could substitute with peanut butter Ritz bits or even oyster crackers or corn Chex)
  • Butter
  • Brown Sugar
  • White Granulated Sugar
  • Cinnamon
  • Vanilla
  • Sea Salt
  • M&M’s or Chocolate Chips

How To Make Cinnamon Sugar Cracker Bites:

This recipe moves quickly because you’re working with a hot sugar mixture. It’s important to have all of your ingredients fully prepped before beginning.

  1. Preheat the oven or a smoker to 350 F. (a pellet smoker would be the best for this recipe because it has a less intense smoke flavor.
  2. Line a baking sheet with parchment paper or aluminum foil and set it aside.
  3. In a large mixing bowl, add the peanut butter crackers and also set them aside.
  4. Over low to medium heat, melt the butter in a small pot or saucepan.
  5. Carefully add in the brown sugar and stir immediately with a whisk. The butter takes a bit of time to get incorporated into the brown sugar. You must continue to whisk until it becomes one mixture. Be careful when working with hot and melted sugar as it can burn you easily.
  6. Once the butter and brown sugar are fully combined, continue to whisk until it bubbles fully for about two minutes.
  7. Whisk in the vanilla and some of the cinnamon powder into the brown sugar mixture. Then quickly pour that mixture over the peanut butter crackers that are in the bowl.
  8. Use a rubber spatula to carefully fold the brown sugar mixture over all of the crackers so they are fully coated.
  9. Spread all the peanut butter crackers out in a single layer on the baking sheet. Smoked or bake the crackers for about 15 minutes or so. You want the sugar mixture to set and it will bubble a bit.
  10. Remove from the oven or smoker and let it rest for about 5 minutes. Use a spatula to carefully fold and toss the crackers a bit and then sprinkle cinnamon sugar over the top to give it more of a cinnamon flavor. Toss them again and sprinkle on the remaining sugar mixture.
  11. It’s important to let the crackers cool completely from the oven before adding the chocolate. Place these easy cinnamon sugar crackers into a serving bowl and mix in chocolate chips or M&M’s and serve.

Ingredients

  • 6 cups Peanut Butter Crackers Nutter Butters, Peanut Butter Ritz crackers or even Corn Chex cereal works for this
  • 1 cup Brown Sugar
  • 1 cup Butter
  • 1 tsp. Vanilla
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Sea Salt

Topping

  • 1/4 cup White Granulated Sugar
  • 1 tsp. Cinnamon
  • 1 cup M&Ms or chocolate chips

Instructions

  • Preheat the oven or pellet smoker to 350 F. Line a baking sheet with parchment paper or aluminum foil and set it aside.
  • Prep all the ingredients so they are ready to go, this recipe needs to move quickly before cooking begins.
  • Place the peanut butter crackers into a large mixing bowl and set it aside.
  • In a pot over medium heat, add the butter and let it fully melt.
  • Whisk in the brown sugar. Continue to whisk until it fully dissolves and mixes completely with the butter, this will take a few minutes.
  • Once the brown sugar mixture is fully combined, continue to slowly whisk and let it bubble softly for 2 minutes.
  • Remove it from the heat and add the cinnamon and vanilla and whisk it in.
  • Pour the brown sugar mixture over the peanut butter crackers and quickly fold the mixture over so it evenly coats all the crackers.
  • Place the peanut butter crackers onto the parchment paper lined baking sheet and spread them out in a single layer.
  • Smoke or bake the crackers for 15 minutes. The sugar mixture should begin to caramelize and harden onto the crackers and bubble slightly.
  • While the crackers are baking or smoking, mix the remaining cinnamon and granulated sugar together in a small bowl.
  • Remove the crackers and allow the crackers to rest about 5 minutes. Stir them around on the baking sheet and coat them in the cinnamon and sugar mixture, tossing everything around halfway through for an even coating of cinnamon flavor.
  • Let the crackers continue to fully cool and harden slightly before placing them into a bowl for serving. Stir in the M&M's or chocolate chips and enjoy!
