How To Make Jalapeño Popper Dip

This is a relatively simple dip, but there are a few small techniques that make a noticeable difference in the final texture.

1. Prepare the Bacon

Cook the bacon until crisp. Remove it from the pan with a slotted spoon or tongs and transfer it to a paper towel-lined plate. Once cool enough to handle, crumble the bacon into small pieces. Set a small amount aside for garnishing the dip after baking.

2. Prepare the Jalapeño Peppers

Slice each jalapeño lengthwise and remove the stem, seeds, and white membrane. Finely dice the peppers so you get jalapeño flavor in every bite rather than large chunks of pepper scattered throughout the dip. You should have around 3/4-1 cup diced jalapeños.

3. Make the Creamy Base

Add the softened cream cheese and sour cream to a large bowl. Mix until mostly smooth before adding the remaining ingredients. Starting with room-temperature cream cheese makes this step much easier. Add the diced jalapeños, paprika, garlic powder, salt, and black pepper.

4. Add the Cheese and Bacon

Reserve 1/4 cup each of the cheddar and pepper jack for the topping. Fold the remaining shredded cheese and most of the crumbled bacon into the cream cheese mixture. At this point, you should have a thick but creamy, cheesy filling.

5. Transfer to the Baking Dish

Spread the mixture evenly into a 9-inch baking dish or cast iron skillet. I like using a 9-inch cast iron skillet because you can mix, bake, garnish, and serve everything in one attractive oven-safe dish. Use the back of a spoon or spatula to smooth the top of the dip into an even layer.

6. Add the Crunchy Topping

Crush the Ritz crackers in a medium bowl and combine them with the reserved cheddar and pepper jack. Sprinkle the topping ingredients evenly over the dip. You don’t need to press the crackers into the filling. Leaving the crumbs relatively loose helps them stay crisp as they bake.

7. Bake Until Hot and Bubbly

Bake or smoke at 350°F for approximately 45 minutes. The exact amount of time can vary slightly depending on your baking dish and whether the ingredients were cold when they went into the oven.

You’ll know it’s ready when the edges are bubbling, the center is heated through, and the cracker topping is lightly golden brown. Garnish with additional bacon, green onions, and slices of fresh jalapeño before serving.

How Spicy Is Jalapeño Popper Dip?

This recipe has some heat, but I wouldn’t consider it an overly spicy dip. Most of the capsaicin responsible for a pepper’s heat is concentrated in the inner ribs or membranes rather than the seeds themselves. Removing both makes fresh jalapeños considerably more approachable.

For less heat, carefully remove all of the white membrane from the jalapeño peppers. For extra heat, leave some of the membrane intact or add additional diced jalapeño. You can also garnish the finished dip with thinly sliced peppers.

Remember that the cream cheese, sour cream, and shredded cheese contain plenty of fat, which helps soften the perception of the spicy flavors.
