Ingredients

  • 1 lb Hanger Steak or preferred cut
  • Kosher Salt and Black Pepper (to taste) - for steak
  • 1 tbsp Olive Oil
  • 1 bag Potato Chips Kettle Cooked or Ridges style work best
  • 1 cup Blue Cheese crumbled
  • 2 tbsp Balsamic Glaze
  • 2 tbsp Chives minced

Instructions

Prepare the Steak

  • Preheat your grill to medium-high heat. Season the hanger steak generously with kosher salt and black pepper on both sides. Drizzle the steak with olive oil and grill for 4–5 minutes per side, or until the internal temperature reaches your desired doneness (130°F for medium rare).
  • Remove the steak from the grill, cover loosely with foil, and let it rest for 10 minutes before slicing thinly against the grain.

Prepare the Potato Chip Base (or french bread slices)

  • Preheat your oven to 375°F. Line a large baking sheet with parchment paper and arrange the potato chips in a single layer, ensuring they do not overlap.
  • Sprinkle the crumbled blue cheese evenly over each potato chip. Bake in the preheated oven for 8–10 minutes, or until the cheese is melted and bubbly.

Assemble the Crostini

  • Remove the chips from the oven and allow them to cool slightly so they’re easy to handle.
  • Top each cheese-covered chip with a slice of grilled steak. Drizzle with balsamic glaze and sprinkle with chopped chives.
  • Arrange the steak crostini on a platter and serve immediately. Enjoy these crispy, creamy, and savory bites as the perfect appetizer for any gathering!

Notes

Substitute the potato chips for sweet potato slices, slice french bread or other base as desired.
