Kosher Salt and Black Pepper (to taste) - for steak
1tbspOlive Oil
1bagPotato Chips Kettle Cooked or Ridges style work best
1cupBlue Cheese crumbled
2tbspBalsamic Glaze

Instructions
Prepare the Steak
Preheat your grill to medium-high heat. Season the hanger steak generously with kosher salt and black pepper on both sides. Drizzle the steak with olive oil and grill for 4–5 minutes per side, or until the internal temperature reaches your desired doneness (130°F for medium rare).
Remove the steak from the grill, cover loosely with foil, and let it rest for 10 minutes before slicing thinly against the grain.
Prepare the Potato Chip Base (or french bread slices)
Preheat your oven to 375°F. Line a large baking sheet with parchment paper and arrange the potato chips in a single layer, ensuring they do not overlap.
Sprinkle the crumbled blue cheese evenly over each potato chip. Bake in the preheated oven for 8–10 minutes, or until the cheese is melted and bubbly.
Assemble the Crostini
Remove the chips from the oven and allow them to cool slightly so they’re easy to handle.
Top each cheese-covered chip with a slice of grilled steak. Drizzle with balsamic glaze and sprinkle with chopped chives.
