Instructions
(UPDATED RECIPE NOTE): Hi! I know so many of you love this recipe, but it has been recently updated after many requests via social media regarding the seasoning packet. I've now created and tested a great alternative to homemade French onion soup mix seasoning- and it's DELICIOUS. But, please feel free to use 1 packet of store bought seasoning per 1 lb of ground beef if this is what you prefer.
Homemade French Onion Seasoning (optional): If choosing to season using the homemade option, combine all the ingredients together in a bowl to form a paste. Allow it to sit for 5 minutes.
Brown and Season the Ground Beef: Add the ground beef to a large skillet over medium heat. Season with either the French onion soup mix packet or the homemade French onion seasoning substitute. Cook until fully browned, breaking the beef up as it cooks. Carefully drain off any excess grease with a paper towel.
Cool the Beef Slightly: Remove the beef from the heat and let it cool for a few minutes. This helps prevent the shredded cheese from melting too quickly when mixed in.
Slice the Slider Rolls: Using a sharp serrated knife, slice the Hawaiian rolls horizontally, keeping the rolls connected. You should have one large top slab and one large bottom slab.
Prepare the Foil for Assembly: Lay out two overlapping sheets of foil and spray lightly with non-stick spray. This prevents sticking and makes cleanup easier.
Mix the Cheeseburger Filling: Once the beef has cooled slightly, add the shredded cheddar cheese and mayonnaise. Mix until fully combined. The mayonnaise adds moisture and acts as a binder, so substitutions are not recommended.
Assemble the Sliders: Place the bottom buns onto the prepared foil. Spread the cheeseburger filling evenly over the buns. Layer with the additional slices of American cheese and pickles (if using).
Add the Top Buns and Wrap: Place the top buns over the sliders and gently press down. Brush on the melted butter and sprinkle on the sesame seeds and poppy seeds if desired. Wrap the the sliders tightly in the foil.
Bake Until Heated Through: Bake the sliders directly on the oven rack at 350°F for 25–30 minutes, or until the sliders are hot and the cheese is fully melted.
Serve and Enjoy: Remove from the oven and cool for 5-10 minutes to make them easy for slicing. Transfer to a platter and serve pull-apart style, or slice into individual sliders if desired. Serve and enjoy!

Make Ahead Friendly: These sliders can be fully assembled up to 24 hours in advance and stored covered in the refrigerator. Remove from the fridge about 1 hour before baking and add extra cook time if needed.
Smoking Option: These sliders can be cooked on a smoker set to 350°F using indirect heat. Mild woods like apple or cherry work best so the smoke doesn’t overpower the beef.
Storage and Reheating: Store leftovers tightly wrapped or in an airtight container in the refrigerator for up to 3 days. Reheat individual sliders in the microwave for 20 to 30 seconds or warm larger batches covered in a 350°F oven.
Freezer Tips: Sliders freeze well for up to 2 months. Wrap tightly in foil and place in a freezer-safe bag. Thaw overnight in the refrigerator before reheating for the best texture.
