Arrange the tinned fish: Open cans just before serving. Drain excess oil if desired, or pour into small bowls to retain flavor. Display directly in their tins or transfer to ramekins.
Build your board: Place crackers or bread on one side of the board. Add cheeses or spreads in small bowls.
Add accompaniments: Scatter pickles, olives, and fresh vegetables in between. Tuck in herbs for color and freshness. Add any garnishes to the board (fresh herbs, lemon wedges, etc.).
