Ingredients
1WheelBrie Cheese
1cupCooked Mexican Chorizo
1/4cupHoney
Instructions
Remove your brie cheese from the packaging and score the top of the rind with a pairing knife in a cross hatch pattern.
Place your wheel of brie into a small cast iron skillet. Preheat your grill to 250 F. on indirect heat.
Add the brie cheese to your smoker and smoke for 20-25 minutes.
While the brie is smoking, cook your chorizo sausage until brown and crispy. Drain excess grease on a paper towel lined plate.
After 20 minutes of smoking the brie, add your cooked chorizo and smoke another 10 minutes and then remove from the grill.
Top with a drizzle of honey and serve with crostini and crackers.
Notes
Sub out the Mexican chorizo for other ground sausage if desired.
