Smoked Baked Beans

These smoky baked beans are sweet, savory, and packed with BBQ flavor. An easy smoked side dish for any cookout or backyard barbecue.

Ingredients

  • 30 oz. Pinto Beans drained and rinsed
  • 30 oz. Cannellini Beans drained and rinsed
  • 1 small Yellow Onion diced finely
  • 4 strips Bacon

Brown Sugar Bacon Seasoning:

  • 2 tbsp. Brown Sugar
  • 1 tbsp. Black Pepper
  • 1 tsp. Smoky Paprika

Sauce:

  • 2 cups Ketchup
  • 1/2 cup Maple Syrup
  • 1/3 cup Brown Sugar
  • 3 tbsp. Worcestershire Sauce
  • 6 tbsp. Molasses
  • 4 tbsp. Apple Cider Vinegar
  • 1.5 tsp. Cornstarch
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp. Garlic Powder
  • 1.5 oz. Bourbon Optional

Instructions

  • Preheat the smoker to 300°F and set it up for indirect heat.
  • Rinse and drain all the beans and add them to the cast iron pan or a disposable aluminum pan.
  • Dice the white onion finely and mix it into the beans.
  • In a mixing bowl, whisk together all the sauce ingredients (adding the bourbon here, if using) until fully combined and the cornstarch has no lumps.
  • Pour the sauce over the beans and fold it all together. Spread everything into an even layer across the pan.
  • Toss the bacon seasoning together in a small bowl and coat the diced bacon in it.
  • Dice the bacon into small pieces and place them in an even layer across the top of the beans. Scatter the seasoned bacon evenly across the top of the beans.
  • Place the pan on the smoker, uncovered. Smoke over indirect heat for 2 to 3 hours, until the sauce is bubbly and thick and the bacon is cooked through and crisp.
  • Serve hot off the smoker with your favorite barbecue and sides.

Notes

Prep the beans and sauce ahead of time and store the pan in the fridge. Add 30 to 45 minutes of extra smoke time if it's going onto the smoker cold. Because this batch has more sauce than a standard recipe, watch it in the last 30 minutes and give it extra time if needed for the sauce to thicken.
