Honey Mustard Chicken Salad Recipe

This Honey Mustard Chicken Salad is made with juicy pan-seared, oven-roasted chicken tossed in a creamy homemade honey mustard dressing with crisp celery, red onion, and green onions. Piled high onto soft pretzel buns, these sandwiches are perfect for lunches, picnics, meal prep, or easy entertaining.

Ingredients

For The Chicken

  • 1 lb Chicken Breast
  • 1 tbsp Olive Oil
  • 1 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Paprika

Honey Mustard Dressing

  • 1/2 cup Greek Yogurt
  • 1/4 cup Mayo
  • 3 tbsp Dijon Mustard
  • 3 tbsp Whole Ground Mustard
  • 2 tbsp Honey
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Worcestershire Sauce
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Chicken Salad

  • 2 Celery Stalks finely diced
  • 1/3 cup Red Onion finely Diced
  • 4 Green Onions thinly sliced

Instructions

Cook the Chicken

  • Preheat the oven to 375°F.
  • Pat the chicken dry and season both sides with the kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat.
  • Place the chicken presentation-side down and sear for 4-5 minutes until deeply golden brown. Flip the chicken over.
  • Transfer the skillet to the oven and bake for 12-18 minutes, or until the chicken reaches an internal temperature of 165°F.
  • Remove from the oven and let the chicken rest for 10 minutes. Refrigerate until completely chilled.
  • Using a chef's knife, chop the chicken into bite-sized pieces for a rustic, hearty chicken salad.

Make The Dressing

  • In a large bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, whole grain mustard, honey, apple cider vinegar, Worcestershire sauce, salt, and pepper until smooth.

Mix the Chicken Salad

  • Add the chopped chicken, celery, red onion, and green onions to the bowl.
  • Fold everything together until evenly coated in the dressing.
  • Serve immediately or let chill for at least 30 minutes for best results or pair with my homemade pretzel buns recipe.

Notes

Store leftover chicken salad in an airtight container in the refrigerator for up to 3 days.
