Baked Eggs (Bain Marie Method)
Preheat the oven to 300 F. Place a sheet of parchment paper into an 8x8 inch pan.
Make the custardy eggs: In a blender, blend 12 large eggs with the half and half, salt, and pepper until fully blended. Pour the mixture into the prepared dish and place it inside a larger 9x13 inch baking pan. Add very hot water to the outer pan to create a bain-marie (water bath), filling it halfway up the sides of the egg dish.
Bake for 30–35 minutes or until the eggs are just set and have a soft, custard-like texture. Let it cool slightly and top it with the fresh chives.
Prepare the sliders: Increase the oven temperature to 350 F. Slice a 12-pack of Hawaiian rolls in half horizontally (keeping the rolls connected), and place the bottom half cut side up and the top cut side down side by side on a parchment paper lined baking sheet.
Assemble: Remove the baked egg from the pan using the parchment paper. Carefully flip the baked eggs onto the bottom layer of cut buns onto the baking sheet. Layer on the slices of cheese (like cheddar or American). To the top buns, brush on the melted butter and sprinkle on the everything bagel seasoning. Bake this for 5-7 minutes in the oven so the cheese is melted and the buns are warm and slightly toasted.
Final Touches: Once the sliders are heated through, remove them from the oven and add the cooked bacon, sliced tomato, and arugula. Top with the top buns, slice, and serve.
