Instructions
For The Bruschetta
In a medium mixing bowl, add the diced tomatoes, onion, minced garlic, and basil. Toss to combine and season with the olive oil, salt, and pepper.
For The Grilled Cheese Sliders
With a sharp serrated knife, evenly slice the slider buns lengthwise.
In a small bowl, mix the softened butter, garlic, and Italian seasoning to form a paste. Evenly spread the butter on each cut side of the slider buns.
Preheat a griddle pan or large skillet over medium-low heat. Add the olive oil to the pan and spread it evenly.
Place one of the sliced slider buns butter side down onto the pan. Add the slices of mozzarella cheese and then cover with the other slider bun, butter side up.
Let the bread cook 3-4 minutes or until golden brown. Carefully flip the sliders with a large spatula and continue to cook the other side another 3-4 minutes until the cheese is melted and both sides are crispy. ** If you have a hard time flipping the sliders, divide them in half (6 each) to make it easier if needed**
Remove the grilled cheese sliders from the griddle and place onto a platter. Top with the bruschetta, slice, and serve!
