Whipped Cheese Base

  • 1 cup Ricotta whole milk reccommended
  • 1 package (5.2 oz) Boursin Cheese

Bruschetta Topping

  • 2 cups Tomatoes seeded and diced small
  • 1/4 cup Yellow Onion diced finely
  • 2 Garlic Cloves minced
  • 1/2 cup Fresh Basil roughly chopped (additional for garnish)
  • 2 tbsp Olive Oil
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • Balsamic Glaze (optional) for drizzling

Instructions

  • Make the Whipped Cheese Base: In a food processor or mixing bowl, combine ricotta and Boursin cheese. Blend until smooth and creamy, about 1–2 minutes. Spread evenly into the bottom of a shallow serving dish.
  • Prepare the Bruschetta Topping: In a medium bowl, mix the seeded and diced tomatoes, onion, garlic, basil, olive oil, salt, and pepper. Let sit at room temperature for 10-15 minutes to develop flavor.
  • Assemble the Dip: Spoon the bruschetta mixture evenly over the whipped cheese base. Drizzle balsamic glaze over the top and garnish with fresh basil.
  • Serve: Pair with toasted baguette slices, pita chips, or crackers. Serve immediately or refrigerate until ready to enjoy.

Notes

  • For best flavor, use fresh, ripe tomatoes. In winter, cherry or grape tomatoes hold up better.
