Ingredients

For the Bruschetta

  • 1 loaf French Baguette Sliced in half then cut each piece lengthwise
  • 2 4 oz. Burrata Balls
  • 1.5 cups Cherry Tomatoes halved
  • 1/2 Yellow Onion finely diced
  • 3 Garlic Cloves minced
  • 1/3 cup Olive Oil
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Fresh Basil Roughly chopped
  • 1 tbsp Butter melted (for the bread)
  • 1 tbsp Olive Oil (for the bread)

Optional Basil Vinaigrette

  • 1/4 cup Olive Oil
  • 1/2 cup Fresh Basil
  • 1 Garlic Clove
  • 1 Lemon juiced
  • Salt and Pepper to taste

Instructions

Make the Bruschetta Topping

  • In a medium bowl, combine halved cherry tomatoes, diced onion, and minced garlic. Drizzle in the olive oil and season with salt and pepper.
  • Fold in the chopped basil. Let it sit to marinate at room temperature while you prep the burrata and bread.

Basil Vinaigrette

  • In a blender or food processor, combine 1 cup basil, ¼ cup olive oil, garlic, lemon juice, salt, and pepper.
  • Blend until smooth and emulsified. Set aside.

Toast the Bread

  • Preheat a skillet or grill pan over medium heat.
  • Brush the cut sides of the French bread with olive oil and a small amount of butter. Toast bread, cut side down, until golden brown and crisp, about 2–3 minutes.

Assemble the Burrata Bruschetta

  • Place toasted bread on a serving tray or board.
  • Gently break open each burrata ball and spread half across each slice of bread.
  • Spoon the tomato mixture generously over the burrata.
  • Drizzle with basil vinaigrette just before serving for an extra burst of flavor.

Notes

Toast the bread right before serving so it stays crisp (but you can make the tomato mixture ahead of time).
