Ingredients

  • 2 Vidalia Onions
  • 4 tbsp Butter
  • 4 oz. Cream Cheese softened
  • 4 oz. Blue Cheese
  • 1 tbsp. Worcestershire Sauce
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  • Preheat the oven or smoker to 325 F.
  • Slice the onions into thin, long slices and set aside.
  • Over medium-low heat, add butter to a large skillet and melt it down. Add in the sliced onions and let them cook and caramelize stirring occasionally. They should cook down and brown, about 15-20 minutes.
  • In a mixing bowl combine the blue cheese, softened cream cheese, Worcestershire sauce and salt and pepper until fully mixed.
  • Fold the caramelized onions into the blue cheese mixture until fully coated and then place it into a cast iron skillet or baking dish.
  • Smoke or bake until heated through, bubbly, and golden brown for about 20-30 minutes until heated through and bubbly. Brown for 1-2 minutes in the broiler (watch closely) if desired.
  • Let cool briefly before serving with your favorite steak cut or other proteins, potatoes, or veggies.

Notes

You can use white or yellow onions for caramelizing, but sweet onions like Vidalia or Walla Walla work exceptionally well.
