Grilled Chicken Nuggets Recipe

  • 3 lbs Boneless Chicken Breast cubed
  • 4 cups Pickle Juice Brine
  • 4 tbsp. Salt Pepper Garlic Rub
  • 2 tbsp. Olive Oil
  • Sauces for Dipping

Instructions

  • Remove the chicken breast from the packaging and pat it dry with paper towels. Use a sharp knife to cut even 1 inch cubes and place the chicken into a large container.
  • Pour the pickle juice brine over the chicken so it covers it completely. Place a cover on the container and place it into the fridge for at least 2 hours or overnight.
  • Remove the chicken from the brine and discard the brine. Pat the chicken very dry again with paper towels to remove the moisture.
  • In a bowl, add the olive oil and the salt pepper garlic (SPG) rub and coat until the chicken is evenly seasoned.
  • Thread the chicken onto skewers for quick and easy grilling. Don't overpack them, give each piece of chicken enough space to cook properly.
  • Preheat a grill for medium direct heat (around 425 F.).
  • Place the skewers directly onto the grill grates, close the lid and let the chicken cook for 5-6 minutes on the first side. It is ready to flip when it easily releases from the grill grates.
  • Flip the chicken and continue to cook an additional 5-6 minutes or until the chicken is nicely seared, has color, and is an internal temperature of 165 F.
  • Remove the chicken skewers from the grill and let them rest 5-10 minutes. Use tongs to pull the grilled chicken nuggets off of each skewer.
  • Place into a serving bowl and serve with your favorite sauces (we love hot sauce, Carolina Gold sauce, and BBQ sauce).

Notes

Use a variety of different seasonings for different flavored grilled chicken nuggets. The leftovers are great reheated or even eaten cold. Use them over salads, in wraps, and more too!
