Smoked Baked Beans

Ingredients

  • 30 oz. Pinto Beans drained and rinsed
  • 30 oz. Cannellini Beans drained and rinsed
  • 1 small Yellow Onion diced finely
  • 4 strips Bacon

Brown Sugar Bacon Seasoning:

  • 2 tbsp. Brown Sugar
  • 1 tbsp. Black Pepper
  • 1 tsp. Smoky Paprika

Sauce:

  • 1.5 cups Ketchup
  • 1/3 cup Maple Syrup
  • 1/4 cup Brown Sugar
  • 2 tbsp. Worcestershire Sauce
  • 4 tbsp. Molasses
  • 2 tbsp. Apple Cider Vinegar
  • 1.5 oz. Bourbon Optional
  • 1 tsp. Cornstarch
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp. Garlic Powder

Instructions

  • Preheat the smoker to 300 F. and set it for indirect heat.
  • Rinse and drain all the beans and add them to the cast iron or an aluminum pan.
  • Next, finely dice the white onion and mix it into the beans.
  • In a mixing bowl, add all the sauce ingredients (if addin in the bourbon, do so here) together and whisk until it is fully combined and the cornstarch if fully mixed in with no lumps.
  • Pour the sauce mixture over the beans and fold it all together. Spread everything out evenly across the pan so it is resting in an even layer.
  • Take the bacon seasoning mixture and toss it together in a bowl. Coat the top of all four strips of bacon with the seasoning mixture.
  • Dice the bacon into small pieces and place them in an even layer across the top of the beans.
  • Place the entire pan of beans, uncovered, onto the smoker. Smoke on indirect heat for about 2 hours or until the beans are bubbly and the bacon is cooked and crispy.
  • Serve the smoked baked beans hot of the grill with your favorite BBQ and sides and enjoy!

Notes

Prep the beans ahead of time and keep them stored in the fridge. Add an additional 30-45 minutes if they are cold out of the fridge.
