Ingredients

  • 1 Mango diced small
  • 2 cups Pineapple diced small
  • 1 cup Red Pepper diced small
  • 1/2 Red Onion diced small
  • 2 Jalapenos minced with seeds removed
  • 1 cup Cilantro minced
  • 2 Limes jucied
  • 1 tsp Sea Salt

Instructions

  • Slice the cheeks off of each side of the mango. Score the fruit into thin slices and then run the knife carefully under the fruit to remove it from the skin and add it to a bowl.
  • Slice the pineapple and cut into small pieces and add to the mango. Then add in the diced red pepper, diced red onion, and minced jalapeno.
  • Finally, add in the minced cilantro and toss everything until combined.
  • Season with sea salt and lime juice and serve.

Notes

I recommend slicing the mango and pineapple fairly fine so that everything is mostly equal in size. This makes is much easier for scooping onto a chip!
