If you’re looking to reduce the carbs from traditional potatoes, check out this simple oven roasted radish recipe for “smashed radishes”.

Did you know you can roast a radish? While we often eat them raw, you can cook them in the oven and use them in a new way!

For this recipe you need - 1 pound of radishes, a block of parmesan, sea salt, olive oil, and fresh herbs (I like rosemary). 

Start by rinsing the dirt off of your radishes and pat them dry. Moisture will prevent browning, so drying them is important. 

Slice your radishes in half. This cuts down on the baking time and helps them brown. Season them with the olive oil, salt, and herbs. 

Preheat your pan in the oven, while the oven heats up. This helps jumpstart the cooking process. Place each radish half, cut side down. 

Roast them cut side down for about 20-25 minutes. Then flip them over and continue to roast an additional 20-25 minutes as well. 

Once the radishes have browned and are fork tender, you can smash them on the pan. Press down with a fork to smash the radishes. 

Preheat your oven to the broiler setting. Pat the radishes dry to remove any moisture after smashing. The sprinkle fresh parmesan over the top. 

Broil the radishes with the cheese until they have browed over. Watch them carefully so they don't burn. Remove them from the oven.
