Start by making the hatch chili syrup. Combine equal parts sugar and water and one hatch chili, sliced with the seeds.
Bring to a boil and then transfer to a smoker and smoke for 30 minutes at 250 F. You can skip the smoking step if preferred and allow the mixture to cool to room temperature before using.
Hatch Chili Margarita Cocktail
In a cocktail shaker combine the tequila, lime juice, grand marnier, and smoked hatch chile syrup.
Shake until chilled and strain into a rocks glass over ice. Garnish with a salt rim or homemade Tajin seasoning and add a lime wedge.
