Pro Tip-If you sauce separates (cheese more on the bottom and cream on the top) you can add a 1/4 tsp of xanthan gum or cornstarch to it to help it out. Keep the heat at medium and keep whisking, just be patient! Adding more xanthan gum will result in a slimy texture to the sauce so don't add much!
