Take your BBQ chicken off the grill and into the oven with this easy to make keto low carb casserole using leftover chicken, crispy bacon, low carb BBQ sauce, and lots and lots of cheese! The perfect under 30 min keto meal for the whole family.
In a bowl, combine the low carb BBQ sauce and the softened cream cheese and combine. Mix in the chicken, bacon, and half of the pepper and onion mixture (you can pre-saute the peppers and onions if desired or toss them in raw).
Mix well until the chicken is fully coated and combined. Pour into a 9x9 inch pan or casserole dish. Top with the cheese and remaining pepper and onion mixture.
Bake until heated through and bubbly about 20 minutes or so (you may need more time if the chicken was cold). Serve with diced avocado and cilantro over the top.
