Grilled Low Carb Corned Beef Hash

Ingredients

  • 2 tbsp Avocado Oil or your oil of choice
  • 3 cups Chopped Cooked Corned Beef
  • 1 cup Jicama diced small
  • 1/2 Yellow Onion diced small
  • 1 Small Green Pepper diced small
  • 6 Eggs
  • Salt & Pepper

Instructions

  • Preheat your skillet to medium heat with the oil. Add the oil and saute the jicama, onions, and peppers until tender and slightly browned (about 5-6 minutes).
  • Add in the diced/ shredded corned beef and continue to cook/saute the mixture is heated through and lightly browned.
  • Move the mixture to the sides of the pan and crack 6 eggs into the center and continue cooking until the whites are set. Remove from the heat and top with a little salt and pepper and serve.
