Hibachi New York Strip Steak with Fried Rice

Ingredients

Hibachi Steak

  • 4 4 oz. Hibachi NY Strip Steaks
  • 2 tbsp Oil
  • Kosher Salt

Crispy Fried Sushi Rice Squares

  • 1 cup Sushi Rice
  • 1.5 cups Water
  • 1 tbsp Sugar
  • 1 tbsp Rice Wine Vinegar

Optional Toppings

  • Garlic Chili Oil
  • Scallions
  • Sesame Seeds
  • Soy Sauce for dipping

Instructions

Crispy Fried Sushi Rice Squares

  • In a pot, add the water and sushi rice and bring to a boil. Once boiling, cover with a lid and reduce the heat to low. Cook for 13 minutes then remove from the heat and let it sit 5 minutes.
  • After 5 minutes, fluff with a fork and stir in the sugar and rice wine vinegar.
  • Prepare an 8x8-inch pan with parchment paper. Pour the rice into the pan and press it down flat with the back of a spatula so it is fully compacted.
  • Place it into the fridge to chill for at least 4 hours (you can prepare a day ahead of time too).
  • To Fry: Remove the parchment paper from the pan and cut the rice into 16 equal size squares. Add avocado oil to a large frying pan so it just covers the bottom and heat to medium-high heat. Fry each side of the rice square for 3-4 minutes or until golden brown and crispy. Remove and let drain on a wire rack and season with a pinch of salt.

Hibachi NY Strip Steaks

  • Remove the steaks from the fridge for at least 30 minutes before grilling. Preheat your grill to high heat.
  • Lightly oil the outside of the steaks and season on all sides with kosher salt.
  • Sear each side of the steak for 1-2 minutes flipping as needed to evenly sear and cook to 130 F. or your desired level of doneness.
  • Let rest 10 minutes before slicing into thin strips.

Assembly

  • Place the fried rice squares onto a platter. Add slices of steak to the top and add the garlic chili oil or other sauces and garnishes as desired and enjoy.

Notes

Want to use a different cut of steak? This works just as great with ribeye or filet mignon too.
