Grilled Beef Satay Skewers

Ingredients

  • 2 lb Sirloin Steak

Marinade

  • 1 cup Coconut Milk
  • 1/4 cup Soy Sauce
  • 1 tbsp Fish Sauce
  • 1 tbsp Red Curry Paste
  • 1 Lime juiced
  • 1 tsp Fresh Ginger minced
  • 2 Garlic Cloves minced
  • 1 tsp Cumin
  • 1 tsp Coriander

Peanut Sauce

  • 1/2 cup Peanut Butter
  • 1/4 cup Soy Sauce
  • 1/4 cup Coconut Milk
  • 1 Lime juiced
  • 1 tbsp Sambal Oelek
  • 2 Garlic Cloves minced
  • 1 tsp Fresh Ginger minced

Instructions

Marinade

  • In a bowl, combine the coconut milk, minced garlic, ginger, soy sauce, fish sauce, coriander, cumin, and curry paste. Mix well to create the marinade.
  • Cut the thinly sliced beef into strips that are about 1-inch wide
  • Place the beef strips in a resealable plastic bag or a shallow dish, and pour the marinade over them. Make sure the beef is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or ideally, overnight for the best flavor.

Peanut Sauce

  • In a small saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, minced garlic, minced ginger, and sambal oelek together.
  • Heat the mixture over low to medium heat, stirring constantly until it becomes smooth and well combined. If the sauce is too thick, you can add a little water to achieve your desired consistency.
  • Once the peanut sauce is heated through and well mixed, remove it from the heat and let it cool.

Grilling Instructions:

  • Preheat the grill to medium-high heat for direct grilling.
  • Thread the marinated sirloin steak onto skewers and set them aside.
  • Place the skewers over direct heat onto the grill grates and move the skewers every minute, flipping and turning so the outside caramelizes but doesn't burn and overcook, about 5-7 minutes.
  • Remove the skewers from the grill. Serve with rice and the homemade peanut sauce for dipping and enjoy.

Notes

Choosing the Right Beef: Select lean cuts of beef such as sirloin or flank steak for tender and flavorful results. Slice the beef thinly against the grain to ensure tenderness as well when preparing.
