Ingredients

  • 1 Biscoff Cookie Pie Crust
  • 8 oz. Cream Cheese Room Temperature
  • 4 oz. Greek Yogurt
  • 1/2 cup Powdered Sugar
  • 1 tsp. Vanilla
  • 8 Strawberries sliced
  • 1 cup Raspberries
  • 1 cup Blackberries
  • 1 cup Blueberries

Instructions

  • Prepare the Biscoff Cookie Pie Crust according to the directions in a fully preheat oven. Let it cool completely before filling.
  • In a large mixing bowl, add in the softened cream cheese, Greek yogurt, powdered sugar, and vanilla. Mix well with an electric mixer until fully combined and smooth.
  • Pour the filling mixture into the center of the cooled biscoff cookie pie crust. Use a spatula to evenly spread it around the inside of the crust.
  • Wash and dry the berries. Sliced the strawberries and then assemble the fruit pizza by scattering fruit across the top or follow the deisign shown in the pictures above.
  • While you can serve the biscoff cookie fruit pizza immediately, it's recommended to let it set up back in the fridge for 45-60 minutes before slicing. Garnish with mint, shredded coconut, or white chocolate chips and enjoy!

Can you make the fruit cookie pizza in advance? Yes, you can prepare the crust and filling in advance and store them separately. Assemble the pizza with the fruit toppings just before serving to maintain the freshness and prevent the crust from becoming soggy.
