Ingredients

Brie Fondue

  • 8 oz. Brie remove the white rind
  • 8 oz. Gouda freshly grated
  • 2 tbsp. Cornstarch
  • 1 cup Dry White Wine sauvignon blanc
  • 1 clove Garlic minced
  • 1 tbsp. Lemon Juice
  • 1/2 tsp. Salt
  • 1/4 tsp. Nutmeg freshly grated if you can

Fondue Dippers

  • 1 French Bread Loaf or Sourdough
  • 1/2 lb. Smoked Turkey Sausage sliced and cooked on the stove
  • 1/2 lb. Brussels Sprouts roasted
  • 2 cups Butternut Squash roasted
  • 12 mini Pretzel Bites
  • 1/2 cup Dried Apricots
  • 1 Green Apple sliced
  • 1/2 cup Whole Pecans

Instructions

  • Begin by prepping any fondue dippers you will want to have. Toast the bread, roast the veggies, etc. Anything hot can all go in the oven and be roasted while you make the cheese sauce.
  • Using a sharp knife, slice the outside rind off the brie cheese wheel (the white chalky part) because it doesn't melt well. Once the rind is removed, diced the brie up into small pieces (it may be a bit sticky because it is a softer cheese).
  • Next, grate the 8 oz. of gouda cheese. Then combine the diced brie, gouda, and cornstarch together into a bowl and toss until everything is coated very thouroughly.
  • In a medium sauce pan over medium heat, add the wine, lemon juice, and minced garlic. Bring to a simmer.
  • Once the wine mixture is simmering, slowly add small amount of cheese (a few tablespoons at a time) to the saucepan and whisk well. The cheese should melt completely into the wine before adding additional cheese.
  • Repeat this process and whisk continuously until all of the cheese is melted into the sauce. Reduce the heat to low and season lightly with a little salt and nutmeg.
  • Pour the brie fondue into an electric fondue pot, mini slow cooker or a cast iron/ ceramic dish (this holds heat).
  • While the sauce is finished, add all the fondue dippers to a platter. Place the brie cheese into the center.
  • Use fondue forks or grilling skewers for dipping and serve!

Notes

Want to make the cheese sauce ahead of time? Simply refrigerate and slowly reheat using the double boiler method (microwaving will cause it to separate a bit).
