Ingredients
1Avocado
1Limejuiced
1/4cupOlive Oilcan sub with avocado oil too
1/4cupMayouse vegan mayo if desired
1tbsp.Dijon Mustard
1Garlic Cloveminced
1/4cupCilantrostems and leaves
Salt and Pepperto taste
Cold Wateroptional (see directions below)
Instructions
In a blender or food processor add the avocado, olive oil, lime juice, mustard, garlic, mayo, and fresh cilantro.
Blend it together so it's smooth and creamy. If it's too thick for your needs, start by thinning it out slightly with 1 tbsp. of cold water and add more as needed until you reach your desired consistency.
Season at the end with salt and pepper to taste.
Serve immediately or store in the fridge for 2-3 days.
Notes
Worried about browning? Place plastic wrap flush over the top of the dressing before covering with an air tight lid to prevent further oxidization.
