The perfect, crispy diced and roasted Southwestern style sweet potatoes! Spicy, smoky, and dusted with cumin for the perfect breakfast potato or side dish.

Tools You Need: – Baking Sheet – Knife and Cutting Board – Mixing Bowl – Spatula

Dice your sweet potatoes into cubes (I like the skin on).

Add sliced jalapenos or sweet bell peppers if you want less spice.

Mix up your cumin, smoky paprika, cayenne, and sea salt.

Mix everything together into a bowl until coated.

Add the potato mixture to a pre-heated sheet pan to jump start the browning process.

Tips For Roasting:  1. Cook at 425 F. 2. keep the potatoes spread out and not touching 3. flip them halfway through

Place in a bowl and sprinkle with a little extra sea salt and cilantro.
