We love this smoked potato recipe – the ultimate blend of crispy texture and rich flavor that will have you reaching for seconds.

Find even sized russet potatoes for easy cooking and predictability. Wash and dry them well to remove dirt. 

Poke each potato with a fork to release steam. Brush with melted duck fat (or olive oil) and then coat in a little salt or your fav BBQ seasoning. 

Wrap each potato in peach butcher paper. This helps them steam/ cook faster on the smoker but allows for the smoke to penetrate better than foil. 

Smoke the potatoes at 350 F. for about 60-75 minutes. Use a meat thermometer probe to check for tenderness.

Remove the potatoes when tender and let rest and cool slightly for 10 minutes. Use the handle of a butter knife to tap around the potato to loosen the insides.
