Mojo is a bright, citrus marinade classically found in Cuban cuisine. It's perfect for roasting chicken for flavor and juiciness!

Start with a whole chicken under 4 lbs. This is the ideal size for crispy skin!

I like to butterfly the whole chicken for faster cooking time. I do this by cutting out the backbone with kitchen shears.

Once the backbone is removed, press down the front of the chicken to allow it to lay fully flat.

Lay it out into a 9x13 inch pan. This works well for marinating in!

Besides orange, lemon, and lime juice, mix up some spices into a bowl like cumin, oregano, garlic, and thyme.

Soak the chicken in the marinade and spice mixture for at least 2 hours or overnight. Remove and pat dry and place on a baking sheet.

Roast until golden brown and the chicken reaches an internal temp of 165 F. Let rest before slicing.
