A fun twist on classic jalapeno poppers, this version is mixed with a blend of char grilled corn with the spicy kick of jalapeños, and crispy bacon, all wrapped up in a creamy, cheesy filling.

To make this recipe you will need fresh jalapenos, grilled corn, onions, garlic, shredded cheese, cotija cheese, sour cream, cream cheese, bacon, cilantro, and tajin.

Combine all of the ingredients (except the jalapenos) into a mixing bowl. Mix the filling until fully combined. 

 Feel free to modify ingredients as desired (I add the bacon in as opposed to wrapping the poppers in bacon- both methods work). 

Stuff the filling into the hollowed out jalapeno halves. If you prefer to wrap in bacon, you can do so now!

Place them onto a wire rack for even heating. This works best for the smoker so they don't fall through the grill grates. 

Place them onto the smoker on the wire rack and smoke at 250 F. for about an hour to an hour and a half. 

Cook until golden brown, bubbly, and the jalapenos are tender. You can also bake or air fry these if you do not have a smoker. 

Serve hot with a delicious sour cream sauce and garnish with cilantro and extra bacon over the top and enjoy!
