Gather your chicken meatball ingredients to start and make your spice blend.

The spice blend is made up of salt, pepper, curry powder, ginger, garam masala and cumin.

Add the spices, egg, coconut flour, garlic, and lemon zest to the chicken and mix well.

Form in 1 inch meatballs and bake on a elevated rack over foil or parchment paper until cooked.

Make your sauce - Start with butter (or ghee) and sauté the onion, garlic, spices, and tomato paste together on low heat.

I used coconut milk for this recipe to be dairy free. You can also sub with half and half or heavy cream.

Once everything is combine in the sauce, cook on low. Immersion blend the onions into the sauce if desired (optional).

Add the cooked chicken meatballs to the sauce and combine.

Serve over white or brown rice. I eat low carb and like cauliflower rice as well.
