Almond Flour Biscuits 

A delicious, flaky, almond flour based biscuit that’s keto and low carb friendly too!

This is a super easy, one bowl biscuit dough recipe. It makes 8 flaky biscuits perfect for breakfast or as a side dish!

Cooking Tools Needed: – Measuring Cups and Spoons – Large Mixing Bowl – Whisk – Rubber Spatula – Cookie Scoop – Cast Iron Pan or Round Cake Pan – Parchment Paper

While this recipe is made with almond flour, I also use Vital Wheat Gluten (also known as seitan) to create a bread like texture.

Despite having the words “wheat gluten” in the name, it actually is a high protein and low carb flour that’s keto friendly. It's not gluten free however (read more via the link to make GF biscuits).

Start by beating the eggs and sour cream together in a bowl. If you want a sweeter biscuit, you can also add a little sweetener here as well.

Then, fold in the almond flour, vital wheat gluten, xanthan gum, baking powder, and the salt.

Scoop the dough out using a larger cookie scoop. Do not flatten them, but keep them nice and round.

I like to bake them in a cast iron with parchment paper, but a baking sheet or cake pan works well too.

I bake them until lightly golden brown (20-25 minutes) and brush with melted butter and add a little more sea salt over the top.

Serve them up with butter or jam (or both if you're like me). They are delicious warm or lightly toasted!
