“School” Supplies: – Food Processor (or cheese grater) – Measuring Cups & Spoons – Parchment Paper – Rubber Spatula – Chef’s Knife – Baking Sheet – Small Mixing Bowl

Mix your almond flour based cookie dough together with cold butter in a food processor.

Add the chocolate and mint extract in (or just add the extract to the chocolate coating if desired).

Wrap the dough into a log inside parchment paper or plastic wrap and freeze to harden and set.

Cut the cold dough into 1/4 inch rounds

Place the cookies on a baking sheet and bake.
