All the spicy and cheesy deliciousness of a classic jalapeno popper stuffed inside a juicy chicken breast Hasselback style!

This recipe is easy to make but does involve a little prep work. Grab all your ingredients and let's get started!

Start by making the cheese filling. In a bowl, mix the cream cheese, shredded cheese, green onion, and seasonings together.

Pre-cook your bacon (this works best for this recipe). Cut the pieces in half to make them smaller for stuffing. 

Use thicker chicken breast for this recipe. Every inch or so, make a slice into the chicken but don't cut all the way through. Make 5-6 slices like this. 

Stuff each pocket with some of the cream cheese mixture, slices of raw jalapeno, and the bacon slices. Season the chicken with BBQ seasoning.

Place your Hasselback chicken breast pieces into a baking dish. You can smoke or bake your chicken (covered with foil to start) at 375 F.

The chicken will take about 35-45 minutes to cook depending on the thickness of each chicken piece. The internal temp should reach 165 F. 

Garnish the chicken with some cilantro and green onions. Serve with my crispy potatoes or some grilled corn! This is a killer meal you will love.
