Pat the chicken dry and either leave it in the fridge uncovered overnight or use baking powder a few hours before grilling to soak up added moisture.

Season as desired and smoked the chicken at 350 F. A higher temp helps render more of the fat in the skin and cooks faster too.

Use a layered foil pan to reduce the mess in the grill (pictured). Chicken is done when it hits 165 F. Takes about 1.5 hours.
