Start by trimming your chuck roast to remove excess silver skin and pat it dry.

Mix up a spice blend of salt, pepper, garlic powder, onion powder, and paprika.

Lightly oil your roast, then coat it on all sides lightly with the dry rub. Place on a wire rack.

Place it on your smoker at 250 F. and let it cook. Spray the bark as needed every 30-60 min.

This was a 3 lb. chuck roast and took roughly 6-7 hours. Roasts can take less or more time.

To speed up the process for cooking, I create a beef broth au jus with onions and garlic.

Place the meat in and cover with foil until it reaches over 195 F. give or take.

I like to remove it from the pan and place it back on the grill for 20-30 minutes to tighten the bark.

You can pull the meat (like pork) or let it rest and slice it like a brisket.

Serve with the extra au jus over the top and pair with your favorite BBQ sides!
