Everything you love about a classic grinder salad sandwich but served antipasto style as a decadent yet simple salad.

This recipe is easy to make and is basically a delicious version of an antipasto salad (but honestly, better). 

Start by shredding your lettuce into thin pieces (this is easier for eating). Use romaine or green leaf lettuce. 

Thinly slice the turkey, capicola, salami, and any other meats of choice. Grate your cheese freshly as well. 

Make the homemade dressing. DO NOT SKIP THIS! It makes this salad so good! A mixture of mayo, EVOO, red wine vinegar, seasonings, parmesan cheese, and lots of fresh garlic. 

In a large bowl, combine the shredded lettuce, slice onions, and banana peppers. Then toss it all with the dressing. 

Place the salad base mixture onto a large platter or in a large bowl for serving the salad. You can serve it this way or as one mixture. 

I like to thinly slice a large beefsteak tomato. These slices are similar to what you would see on a sandwich, but you can dice them as well. 

Pile the meat and cheese onto the top of your salad mixture. You can season with more oregano and parmesan cheese. Serve as is or toss altogether.
