It’s honey infused to be hot and spicy. You can make this easily at home by simply slicing a few hot peppers to warmed honey and infuse.

What is hot honey?

I used - Hot Honey syrup, soy sauce, pineapple juice, fresh ginger and garlic, and chili paste (for more heat) and olive oil.

Add everything to a bowl and whisk aggressively to allow it to come together. Reserve 1/4 cup for grilling.

Pat the chicken wings dry with a paper towel to remove excess moisture. 

How to prep your wings:

Pour the marinade over the wings in a bag. Allow them to marinade for at least 2 hours (or overnight). Discard the marinade in the bag.

Smoked the wings at 350 F. on indirect heat until they hit 165 F.

Remove and set the grill now to direct heat to get a little char. Use the reserved marinade to toss again before placing back on the heat.

Sear over the flame and move them very often so they don't burn. Bring them to 180-190 F. for best texture.
