Start by roasting and charring your red peppers. You can do this on the grill, on the stove, or in your oven.

Let the peppers sweat in a bag and then peel off the skin. Dice your herbs and onion.

Add all the cut vegetables and herbs into a mixing bowl.

Add red wine vinegar for acidity.

Then pour in a generous amount of quality olive oil.
