This is an easy, hot and fast recipe for smoked pork belly. It's perfect on it's own, adding to stir fry or ramen, hash, sandwiches and more!

Either cut your pork belly in long thick strips, or leave it whole. Use a knife to crosshatch the fat cap.

Use a little oil or a little mustard and coat the pork belly. Then season generously on all sides with your favorite BBQ rub.

Place it on indirect heat on your smoker (or in an oven) and cook at 350 F. to render the fat for 2 hours.

Crank up the heat to 425 F. on indirect to get the fat cap nice and crispy for another 45-60 min.

They should come off nice and crispy with a beautiful BBQ bark. I like to let them rest briefly before slicing into pieces.
