This incredible flavor-packed artichoke heart salad recipe is the perfect main dish or side dish you need to make on repeat for lunch or dinner.

An easy salad recipe using frozen and defrosted artichokes, tomatoes, white beans, red onion, olives, parmesan cheese, and fresh basil. 

Start by prepping your artichokes by defrosting them and drying them well with paper towels. Season with olive oil, panko, parmesan, garlic powder, red pepper flakes, and oregano. 

Air fry the artichokes until crispy and tender and golden brown. They take 6-8 minutes or so or can be baked and broiled as well. 

While the artichokes are frying, prep your salad ingredients. Add sliced tomatoes, sliced red onion, green olive and white beans to a bowl. Add in roasted red pepper and some fresh garlic. 

Mix in the some shredded parm and fresh basil. Build a dressing of lemon juice, olive oil, red wine vinegar, red pepper flakes, salt and pepper. 

Combine everything in a bowl and mix until fully combined. You can serve it with some grilled chicken, fish, or shrimp for added protein.
