Savor the flavors of New Orleans with this chicken and chorizo jambalaya recipe! A perfect blend of spicy sausage, chicken, rice, and Cajun spices.

Jambalaya is a one pot American Creole dish that typically consists of rice, sausage, chicken, and shrimp, and is boldly flavored with Cajun and Creole spices!

For this easy version I like to used diced chicken breast, smoked sausage, and ground chorizo sausage. You can also use diced ham as well. 

Additionally, you will need onion, celery, and green pepper. Add in garlic, red pepper paste, Creole or Cajun spices, rice and chicken stock. 

Start by browning the ground chorizo to cook it. Then add in the raw chicken and cook it in the spice mixture of the chorizo. Finally add in the sausage to brown. 

Next, mix in the the onion, celery, and green pepper. Cook until the veggies are tender. Finishing the mixture off with the spices, garlic, red pepper paste, and rice. 

Pour in the chicken stock and bring to a simmer. Cover and reduce to low heat and let it cook 15-20 minutes until the rice is done. Let it rest 10 minutes. 

After resting, you can fluff it with a fork. Serve with crusty bread and hot sauce. Garnish with chives or green onions.
