To make tender and flavorful broiled beef kebobs, you need to use sirloin steak. Sirloin steak is a leaner high quality cut near where the tenderloin is located.

Remove large pieces of fat and any silver skin. Slice against the grain into even, two inch pieces and place in a bowl.

To the steak, I like to add a marinade. Add red wine, onion pieces, salt, pepper, fresh parsley, and Aleppo pepper for some heat.

Seal the steak and marinade into a bag and allow it to rest in the fridge for at least two hours or overnight. This adds a ton of flavor!

Before skewering the meat, remove it from the marinade and pat it VERY dry. Wet meat steams and doesn't sear.

Place the meat on a cooling rack over a baking sheet and put the meat on the skewers as well.

I cook mine until they are medium rare on high under the broiler. Flip halfway so both sides get some sear.
